Potato Salad Recipe
Here is a simple recipe for classic potato salad:
- 2 pounds of potatoes, peeled and cut into bite-sized pieces
- 1/2 cup of mayonnaise
- 2 tablespoons of Dijon mustard
- 1 tablespoon of apple cider vinegar
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 hard-boiled eggs, chopped
- 1/4 cup of chopped onion
- 1/4 cup of chopped celery
- 1 tablespoon of chopped fresh parsley
- Boil the potatoes in salted water until tender, about 10-15 minutes.
- Drain the potatoes and let them cool.
- In a separate bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Once the potatoes have cooled, add them to the bowl with the dressing.
- Add the chopped hard-boiled eggs, onion, celery, and parsley to the bowl and stir until well combined.
