here’s a simple recipe for pancakes that serves 4 people:

Ingredients:

  • 2 cups all-purpose flour
  • 2 tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp. vanilla extract
  • Additional butter or cooking spray for the skillet

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix – a few lumps in the batter are fine.
  4. Heat a nonstick skillet or griddle over medium heat. Add a small amount of butter or cooking spray to coat the surface.
  5. Use a 1/4 cup measuring cup to scoop the batter onto the skillet or griddle. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
  6. Use a spatula to flip the pancake and cook for an additional 1-2 minutes, or until lightly browned on both sides.
  7. Repeat with the remaining batter, adding more butter or cooking spray to the skillet as needed.
  8. Serve the pancakes warm with your favorite toppings, such as butter, syrup, fresh fruit, or whipped cream. Enjoy!
