Here’s a recipe for classic Chinese-style fried rice:

 

Ingredients:

  • 3 cups cooked rice, chilled (day-old rice works best)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup frozen mixed vegetables (carrots, peas, and corn)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions, chopped, for garnish (optional)

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and chopped onion to the pan and stir-fry for 1-2 minutes, until fragrant.
  3. Add the frozen mixed vegetables to the pan and stir-fry for another 2-3 minutes, until the vegetables are cooked through.
  4. Push the vegetables to the sides of the pan, creating a well in the center.
  5. Add the beaten eggs to the well and scramble until cooked through.
  6. Add the chilled cooked rice to the pan and stir-fry for 3-5 minutes, until the rice is heated through and starting to brown.
  7. Add the soy sauce to the pan and stir to combine.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions, if desired.

Note: You can add other ingredients to the fried rice, such as diced cooked chicken, shrimp, or pork, or sliced scallions, bean sprouts, or mushrooms, to customize the dish to your liking.
